Pre-Baby Stock Up

Hey there!

Lately, I have been in major nesting mode.  I think John might be ready to get rid of me if I move anything else around while I tidy and organize.  But, what can I say?  I have only 4 more weeks before little man’s estimated D-Day.  My mind is in overdrive thinking of all the time I won’t have once there are two small humans to care for throughout the day.  I’m a little terrified.

One of the things on my goal list before Christian arrives is to be on a better meal planning schedule.  I’m absolutely terrible at meal planning.  I don’t like cooking very much at all and am usually searching for dinner ideas at 4:30 each afternoon, which makes me hate cooking even more.  So, I decided that cooking dinners once a month might be for me.  I can plan it all out, shop, cook everything and stick it in the freezer and be done in the kitchen all at once.  Plus this way, once baby Christian comes, I won’t have to be in the kitchen in the evenings.  I can just pop something in the crock pot or oven and let it do it’s thing.  Freezer meals were definitely one of the things that I so appreciated when I had Alex (thanks to my sister, my freezer was stocked!).  Because who wants to spend time cooking when you have a face like this to stare at?

So, I thought I would share with you all what I made this month (with links to recipes!) for our meals!  And I want you to know that if I can do it, so can you.  Because I really hate cooking.  Like, really.

For most of the dinners, they call for filling a 9×13 pan.  That always ends up being too much food for us since it’s really only John and I eating (Alex is the pickiest eater known to man).  So, I bought disposable 8×8 baking pans from Kroger (3 for $1) and split each recipe into two dinners.  So far it’s been enough for John to have 2 servings at dinner (and me to have one) and have 1-2 leftover servings for John’s lunch the next day.  Obviously if you have a larger family, or one who eats more than us, stick with what you know!  This is just what works for us.

For breakfasts:

Breakfast Burritos (I made 16)

Breakfast sandwiches (I made 12)

Frozen Pancakes

French Toast Casserole

 

For dinners:

Chicken and Ranch Enchiladas

Chicken Enchiladas

Salsa Chicken

Baked Rotini

Cheesy Chicken and Rice Casserole

Chicken Tacos

Twice-Baked Potato Casserole

Potato Soup

Creamy Chicken and Noodles

Pizza Dough

 

Snacks:

Granola Energy Balls

Vanishing Oatmeal Cookies

7-ingredient Granola

I hope you can use this list to get you started!  I also keep pasta, frozen meatballs, garlic bread, sandwich fixings, veggies, fruit,  cereal, and other snacks on hand..  John will try to tell you that all I cook is spaghetti, but that is simply not true.  I use other kinds of noodles as well.

The countdown is definitely on for Baby Christian!  We are so excited/nervous to meet the little guy, it’s hard to believe he will be here so soon!
